Inspire the Next Generation of Explorers As Only NASA Can..... CHECK!

Are astrobiology skills directly useful to a post-PhD career, particularly if it is outside astrobiology? (Admittedly, it is difficult to find anything strictly "outside" of astrobiology.)

There is certainly no shortage of interested young scientists. See this fantastic video for evidence.

Yes, I strongly believe so. Astrobiologists have this uncanny ability to be conversant about scientific topics outside their discipline, and thus they are better, in my opinion, at communicating science to the public as well, which is (in part) behind the motivation to create s.a.g.a.n. as a platform to bring astrobiologists together with the general public to talk science (we'll get there :) ).
